Easy & Healthy Chickpea Flour & Soda Bread

You are going to looooooove this chickpea flour & soda bread, it's so easy and quick to make! It's tender, light and fluffy; grain-free, vegan, gluten-free, and so delicious! Ready in less than 20 minutes.


You can add any topping you want: poppy seeds, sesame seeds, pumpkin seeds, dried onion bits and coarse salt – and make in all different kind of shapes. If you have a donut mould, it would work perfectly as well.

I have made this recipe to yield six -seven breads, but you can double or triple it !





INGREDIENTS

  • Chickpea flour, 120 g 

  • Baking soda, 1/2 teaspoon

  • Non-dairy milk, , 150ml  (I used unsweetened almond milk)

  • Vinegar, 1/2 tablespoon (white or cider vinegar)

  • Flaxseeds, 2 tablespoons

  • Salt, 1/2 teaspoon

  • Olive oil, 1 tablespoon 

  • Optional: Honey, 1 tablespoon (or any other sweetener)





INSTRUCTIONS


Preheat oven to 180°C. Grease 6 cups of a standard muffin moulds.


In a small bowl or cup, stir together milk and vinegar. Set aside for about 5 minutes.


Meanwhile, in a medium bowl, whisk together the chickpea flour, flaxseed meal, baking soda and salt.


Add the milk mixture, olive oil, and honey (if using any); stir until blended. POur the batter in the muffin tins, sprinkle with topping of your choice.


Bake for about 15 minutes until puffed, golden brown. You can insert a toothpick in the centre, and if it comes out clean, bread is cooked!


Cool completely before eating.


You can serve the bread with anything really. As you can see from the picture, I had them with a nice warming soup and vegan cream cheese tofu. The sky is the limit!



You can store the bread in an airtight container at room temperature for 2 days, in the refrigerator for 1 week or freezer for 3 months.
