The Cooling Cucumber & Avocado Gazpacho

Who’s in the mood for a refreshing Avocado & Cucumber Gazpacho to cool down during the heatwave? It’s light and summery, creamy and filling ... and so healthy!


The gazpacho is packed with essential minerals and healthy fats to keep your energy levels high and give your fat-burning metabolism a natural boost.


(Serves 2 people)

Ingredients


  • Cucumber, 1 large

  • Fresh mint, 1 large handful (or any other herb that you fancy: basil, coriandre/cilantro, etc.)

  • Ripe avocado, 1

  • Fresh lime (or lemon) juice, 1 tablespoon or more to taste

  • Extra-virgin olive oil, 1 tablespoon

  • Garlic, 1 small clove

  • Black pepper and salt, to taste

  • Ice cubes, 4-5



Instructions


Chop the cucumber roughly, and blend with the mint, avocado, lime juice, olive oil, black pepper and salt.


Mix until smooth and creamy.


Taste and adjust the seasonings if needed.


Serve immediately. Enjoy !



Note

I'm pretty sure you could use basil or cilantro/coriandre if mint isn't your thing!
