Air-Fried Glazed Veggies & Tofu

A simple bowl of colour, crisp edges, and savoury comfort.




Lately, I’ve been turning to the air fryer more and more — not just for speed (though it’s fast), but for the way it transforms vegetables. There's a kind of quiet joy in seeing them come out with golden edges, their flavours deepened, their texture just right: soft inside, crisp outside.


When combined with a light glaze — olive oil, soy sauce, apple cider vinegar — something happens. It’s subtle, but the kind of subtle that keeps you going back for another bite.




This easy vegan dinner is a balance of simplicity and satisfaction. A few humble ingredients, a bit of marinating, and the gentle power of hot circulating air turn simple plant-based meals into something special.


Ingredients for Roasted Glazed Vegetables and Tofu


(Serves 2–3)

  • 2 medium carrots, peeled and cut into batons or a handful of baby carrots (no chopping needed)

  • 1 courgette (zucchini), sliced into generous medium pieces

  • 3–4 garlic cloves, whole or halved

  • 1 block of firm tofu, pressed and cut into cubes or thick slices


For the glaze:

  • 3 tbsp olive oil

  • 2 tbsp soy sauce

  • 1 tbsp apple cider vinegar

  • Salt, black pepper

  • Sweet paprika (or smoked, if you like)

  • Optional: cumin, thyme, chili flakes — whatever else your hands reach for


How to Prepare Your Air Fryer Veggies and Tofu


  1. Prep the tofu and vegetablesIf you’re using regular carrots, peel and cut them into batons. Baby carrots work beautifully here too and don’t need chopping — just toss them whole. Slice the courgette into generous medium pieces. Press the tofu if needed — then cut into cubes or thick slices, whichever you prefer for texture.

  2. Make the glazeIn a small bowl or jar, whisk together the olive oil, soy sauce, vinegar, and your chosen spices. Taste and adjust — you might like it more vinegary, or with a touch of honey or maple syrup if you're leaning sweet.

  3. Marinate for maximum flavourToss the tofu and vegetables with most of the glaze and let them sit for at least 15–20 minutes. Give them a stir or spoon the sauce over now and then, just to keep everything coated and soaking.

  4. Air fry to crispy perfectionPlace the marinated tofu and veggies directly into the air fryer basket. Cook at 180°C (350°F) for about 18–20 minutes, shaking or turning once halfway through. You're looking for those crisp edges and slight caramelisation — especially on the tofu.


Serving Suggestions for This Healthy Plant-Based Meal

Pile everything into bowls. Drizzle with the remaining glaze if you saved a little. Fresh herbs, sesame seeds, or a spoonful of tahini work beautifully on top.
