The beetroot falafels

When it's dark and grey outside, you put some colours in your cooking. Beetroot is definitely the best ingredient to do so – remember the beetroot hummus and its amazing colour? Some would argue that beetroot tastes like earth, but I have to disagree; I think that it’s sweet and delicious – if well prepared.

Here comes the beetroot falafel recipe I tried last night: easy, cheap and healthy!

Ingredients

  • Beetroots, 2 medium

  • Chickpeas, cooked, 250 g

  • Coriander, fresh leaves, a handful

  • Garlic cloves, 2 large

  • Sea salt

  • Cumin, ground, 1 tablespoon

  • Red pepper, 1 teaspoon

Procedure

Preheat the over at 180°C.

Peel the beetroots and cut them in cubes. Bake them for about 45 minutes until soft. I guess you could also steam them. When ready, set aside to cool down.

Put the rest of the ingredients in a food processor and blend. The mixture doesn’t have to be all mashed.

Roll into balls  – golf ball size. Place them on a baking sheet, and then press them into patty shapes (they’ll cook faster).

Bake them for approximately 7 minutes on each side, the closest to the grill.

Serve immediately. We had them with some rocket salad and feta cheese. Yum-my!
